Rocket launching is usually a daytime activity, for safety reasons, and because it's much easier to find and recover your rocket during daylight. But there are sometimes night launches of rockets designed with lights. Taping glowsticks to the side is sometimes done but seriously frowned upon because it completely disrupts the aerodynamics and usually results in an erratic flight that raises the potential for injury.
And since rocket launches are usually held in inhospitable environments, going out for a nice meal afterward is a wonderful idea. After being out all day in the sun with very few trees around (trees eat rockets as well as kites), and few amenities, a nice dinner in a nice restuarant is particularly welcome!
